Is there such a thing as a anchor connector to join two lengths of chain together ?

Absolutely This from McMaster-Carr An absolutely great source of industrial (boat) hardware.

Hammer-Close Connecting Links—Not for Lifting

Strike the prongs with a ball peen hammer and they expand to hold the connecting link together.

Galvanized steel links have a thick coating for corrosion resistance.

316 stainless steel connectors have excellent resistance to salt water and chemicals.
