    Not a problem at typical sailboat speeds. Running on one engine at 10 knots for long periods could result in overheating. The oil pump is not pumping while free wheeling. If engine is not running a PSS seal ay high speeds might need an alterative source of water.

    4 blades are much better at low speed, better economy and more bite so better response, (assuming you adjust pitch to get same rpms at WOT.) I think price and availability are bigger factors. 4 blades are more expensive and may be special order.

    I have not noticed any significant difference between 3 blade and 4 blade on my 22" props. I went with 4 blade because they had what I wanted in stock. In theory, with equiv. pitch, 3 blade should be a bit faster, but in practice I am unable to detect a difference.

    I doubt you would see a huge difference with an inch in pitch on such large props but are you able to reach max rpm at WOT with existing props? If you are just buying these as spares then the pitch doesn't matter.
